The skinny on Babycakes NYC.

Located in cities dominated by cupcakes overflowing with sugar, flour and butter cream, it’s easy for those with persnickety diets to feel left out. BabyCakes offers all-natural, organic and delicious alternatives free from the common allergens: wheat, gluten, dairy, casein and eggs. Rest assured, all sweeteners have been chosen responsibly and used sparingly. White sugar will never be found in the bakery, nor will they ever use toxic chemical sweeteners. Instead, most products are sweetened with agave nectar with the occasional use of unprocessed and unrefined sugar.

Menu items are completely gluten-free, wheat-free, soy-free, casein-free, egg-free, vegan, kosher, and freaking delicious. Popular menu selections include their rotating assortment of cupcakes, cookies, and most notably their unbelievable cookie sandwiches. With a great concept and good food it leaves no question to why Babycakes has attracted celebrity regulars, released a vegan cook book known to some as the bible, launched successful locations in LA and NYC, and absolutely set the trend for making delicious and health conscious baked goods.

Q: Most surreal moment of the bakery’s existence?
A: The moment the paper came down from the windows when we opened in NY in 2005.

Q: Being new to LA; the gourmet cupcake Mecca, have you prepared any secret cupcake recipes or flavors to compete with the established cupcake locations?
A: No, I believe in just being yourself and let the cupcakes speak for themselves.

Q: What’s the best music to bake to?
A: My favorite is The Cults.

Q: Do you have any off-the-menu items?
A: Not just yet.

Q: Furthest a customer has driven to get to BabyCakes?
A: At the LA bakery, it has been San Francisco so far.

Q: Favorite food themed TV show?
A: Top Chef.

Q: Most exciting part about opening in LA?
A: Meeting all the new customers.

Q: Most underrated menu item?
A: The chocolate chip cookies.

Q: Favorite vegan restaurants in NYC?
A: Pure Food and Wine.

Q: Bakery concept item that never made it to the menu but should have?
A: They're all there!

Q: Favorite celebrity regular of BabyCakes?
A: Rachel Maddow.

Q: What are the oddest ingredients you’ve experimented with for new bakery items?
A: Garbanzo fava bean flour.

Q: Favorite seasonal-only bakery item?
A: Lemon raspberry poundcake.

Q: Have you ever used soy meats in your products?
A: No.

Q: Favorite LA & NYC neighborhoods?
A: LA: West Hollywood and Downtown. NY: LES and W. Village.

Q: Coolest private event you ever catered?
A: A Beastie Boys concert in summer 2007.

Q: Favorite LA lunch spots?
A: Tender Greens.

Q: Better Babycakes picnic spot - Central Park or Santa Monica Pier?
A: Santa Monica Pier.

Q: Dream Babycakes spokesperson (dead or alive)?
A: Chevy Chase.

Q: Strangest customer request?
A: Someone asked if they could bring their own ingredients for us to bake with.

A: Chocolate with vanilla.

Q: The single most popular BabyCakes item of all time?
A: Red Velvet cupcake

5.Cold case breaking day after we opened. Sweltering NY heat melted all the cupcakes.
